Figs and Goat Cheese Cake and Figs Galette....So Yummy!!


Figs and Goat Cheese Cake


Figs Galette


Figs and Goat Cheese Cake

200 grams of mild goat cheese (room temperature)
4 eggs
½ cup of cream (I used 35%)
½ cup of milk
80 grams of sugar (more depending on your taste)
Seeds of 1 vanilla bean
50 grams of flour
1 teaspoon of baking powder
Figs
Sugar (to sprinkle the figs)
Icing sugar







Wash and cut the figs in quarters.

Mix the flour with the baking powder, and sift it. Set aside.

Beat the egg yolks and sugar until is creamy. Incorporate the milk, cream, and vanilla seeds. Add the goat cheese. Slowly incorporate the flour/baking powder avoiding lumps.

Beat the egg whites until foamy. Incorporate the egg whites foam into the batter.






Grease and flour an oven proof dish. Preheat the oven to 350F. Put the batter in the dish, and distribute the figs. Sprinkle with sugar.

Bake for 30 minutes until golden brown, and a toothpick comes clean. Let it cool, and sprinkle with icing sugar......ENJOY!!

I have to say that this is one of the best Galette recipes I ever tried. I have repeated this recipe changing the figs for cherries, apples and blueberries, and apricots......it is delicious.....ENJOY!!
