Spinach, Mushroom and Feta Galette and Flan a l'Alsacienne.....



This dessert called Flan a l'Alsacienne (also from the same book) is easy, simple and delicious. I couldn't broil it on top, but it was good anyway.

Flan a l'Alsacienne

Filling

2 apples (I used gala apples)
1/2 cup Candied orange peel 
1 tablespoon of butter
1 tablespoon Orange liqueur

In a pan, heat the butter and add the sliced apples and candied orange peel. Cook it for 3 minutes, and flambe with the liqueur. Set aside.


Filling:

500 ml of milk
125 grams of sugar
1 teaspoon all purpose flour
1/4 cup of cornstarch
Vanilla extract
2 eggs

Heat the milk with the sugar. Set aside. Mix the eggs with the vanilla extract, all purpose flour and cornstarch. Whisk into the milk, and heat it again to make a pastry cream.

Distribute the fruit in ramekins, cover them with pastry cream, sprinkle with sugar.....and....ENJOY!



 Spinach Mushroom and Feta Galette

My daughter loves spinach. I have to cook with spinach almost everyday; therefore, I always have it in the fridge. I wanted to try something new with some leftovers that I had in my fridge.

Dough

2 cup all purpose flour 
1/2 Teaspoon salt 
1/2 Cup olive oil

2 teaspoons of zaatar (spices). You can use oregano, thyme or dry basil.
Water as needed


Combine the flour, zaatar and salt in a bowl.  Add the olive oil and mix it well. Add necessary water to form a dough that is elastic but not sticky. Let it rest for at least 2 hours in the fridge.

Filling

300 grams of baby spinach
1 leek
2 eggs
A piece of feta. About 80 grams
Some parmiggiano reggiano grated. About 50 grams.
Salt
Oregano
Pepper
Olive oil
Garlic
Mushrooms.

Wash the spinach . Chopped them and dry them.

In a pot, heat olive oil and sautee the leek. Season it with salt and pepper. Add the spinach. Cook it for 5 minutes.

When this mixture is cold, add the garlic and oregano. Incorporate the feta cheese in pieces, the parmiggiano reggiano cheese and eggs. Stir it until combined.

Divide the dough in 6 pieces,and roll it in circles. Place some filling inside, but no in the borders.



Close it

Clean some mushrooms, slice it and put them on top

 Cook it in a preheated oven at 380F until it is cook and golden. It took me 35 minutes. I was baking bread at the same time.....ENJOY!
